Welcome to Eat Simply. Live Healthy! Thank you for visiting my site and taking time to read a little about me. I started this blog a year ago and never imagined how much it would grow. I love writing. I love health. I love fitness. I love food. Hence, my blog was born.

I began living and consuming a healthier lifestyle a couple years ago. I was a Division I athlete but never considered myself a health nut (I loved salads... but covered in french fries and ranch dressing).



You would think that intense lift sessions and long practices would mold me into the epitome of fitness.... but, I still enjoyed our all-you-can-eat cafeteria. My eyes would triple in size at a glance of the dessert table ("wow, they have chocolate cake...everyday?). My plate count averaged out about 5 per meal. Once I stopped playing my sport, I decided it would be a perfect opportunity to become the person I have always envied. I was never huge nor petite; I just wanted to be healthy and happy with my body.

Two years later, I have incorporated healthy habits into my everyday routine. I have expanded my cooking and gardening skills, completed my first 5K and finished a 50-mile LIVEStrong bike race.




I have never felt better. I  hope to use my blog to influence others to take giant or baby steps to a healthier lifestyle. Your body is a machine, what you put in is what you get out.

What's your major?

I am a 22-year old Business major with a focus in Marketing! I am also working on my Master's degree, busy busy. Over the next year I will be finishing my masters in Integrated Marketing Communications. Then I will be an adult, sigh.


Why blog?

I have always loved to write and wrote a ton of poetry growing up. My parents don't know where I get my love of writing, but for some reason I love being able to express myself through creative phrases. Writing is an outlet for me; and since I love eating right and living healthy, why not start a blog. Bam.


Have you always been healthy?

Nope. Not at all. Growing up I was always a 3-sport kid (soccer, basketball and softball), but my eating habits weren't as impressive. I wasn't unhealthy per se, but I craved a lot of Happy Meals (I was nuts over the Beanie Babie toys). I also was never a huge fan of veggies (I always ordered a "just lettuce" salad with Ranch dressing) and I don't think I would have touched a veggie burger or, gasp, tofu. Within the last couple years, my eating habits have evolved completely (I'm a certified veggie-holic). I try to eat as healthy as possible while still indulging regularly. I could never give up sweets, so I've had to critique my portion distortion to smaller servings. I look and feel better than ever before.


What are your favorite foods?

I'm a huge foodie. I'll eat anything. My friends and family know that I absolutely love air-popped popcorn. I also love anything drenched in chocolate. Chocolate covered popcorn?, now we're talking. Oh, and I'm obsessed with salmon. I'd eat it for breakfast, lunch, dinner and in between.


What do you do to keep in shape?

For the first 15 years of my life, I played a lot of softball. I played Division I softball for my first two years of college, but then decided to take my life in another direction and hang up my cleats. Since then, I make sure working out is a part of my every day routine. I rock climb, run, and mountain bike. I've just recently gotten into road biking which I'm slowly becoming addicted to. I also take yoga and kickboxing classes. I always mix up my exercises so it's always fun and never dull and reptitive.
